Meatless Monday Avocado Quinoa Salad with Cilantro

I love this Avocado Quinoa salad for Meatless Monday! Quinoa is a great meat substitute. Technically, it’s a seed – so if you’re going “grain free” quinoa is still allowed. It’s also free of gluten, if that’s your thing. It’s a superb source of protein, so it’s a natural for a Meatless Monday. Plus, it’s loaded with potassium – most Americans need more potassium. I like to make a good deal of quinoa on Sunday and use it throughout the week. That way, I only have to heat up the kitchen once, and it saves a lot of time later on. The quinoa and chickpeas are great protein, and avocados are loaded with healthy fats. This is a very hearty main course salad – you will not miss the meat! This recipe makes 4 – 5 meal-sized portions.

Ingredients

  • 1 cup dry quinoa
  • 2 cups vegetable broth
  • 1 can garbanzo beans (drained and rinsed)
  • 1 cup cherry tomatoes cut in half or 1 large chopped tomato
  • 3 avocados cut into cubes
  • 2 cups chopped spinach
  • 1/2 cup chopped cilantro
  • ¼ cups red onion finely chopped
  • 2 – 3 cloves minced garlic
  • juice from 2 large lemons
  • 2 tsp Dijon mustard, or 1 tsp dry mustard
  • 1 TBSP extra virgin olive oil
  • 2 tsp raw honey
  • ½ tsp cumin

Cook Quinoa

Rinse your quinoa thoroughly, then cover with broth in a large pot with a lid. Let it soak for 10 – 15 minutes.  Turn heat to medium/high and bring the broth to a boil. Then, turn it to medium and let it simmer for 20 – 25 minutes, stirring occasionally.  Once the liquid is absorbed, remove the pot from the heat and cover with a lid. Let it cool to room temperature. (Or, like me, store in the fridge for use later.)

Dressing

In a small bowl, whisk together olive oil, lemon juice, honey, salt & pepper and cumin until well mixed.

Prepare Salad

In a large bowl, place chopped spinach, cilantro, garlic, chickpeas and onions and mix in the cooled quinoa.  Toss with the dressing. Carefully stir in avocados and tomatoes last. Garnish with a little cilantro.

 Serve & Enjoy your Avocado Quinoa Salad!
